I have to say, I'm not the greatest at baking. So, I tend to stick to easy recipes. Most things I make have a 50/50 chance of coming out good, so I'm always delighted when they do.
I have a bunch of clementines I bought a few weeks ago. They are still good, but are getting a little dry and won't make it much longer. I decided to look for some recipes to use them in and found something. I came across this great recipe for Flourless Orange Cake. It calls for 1 pound of clementines, oranges, or you can even use lemons, yum! A great way to use up any citrus fruit that is going to turn soon. The recipe calls for ground almonds, so, I bought Trader Joe's Just Almond Meal, and it works great. The cake came out SO good. It is so moist and tasty and can be eaten alone ( I don't think it needs frosting, but an orange glaze might be good.) We ate it with a little bit of apricot jam on top.
